I can’t get enough banana bread in my life right now. Last week I made the best banana bread recipe! Not even lying!

I grabbed a few different recipes and just modified them to make it my own, and as healthy as possible. I have been getting more and more adventurous with my healthy baking since I don’t have all the ingredients in my house right now and want to make do with what I have. That is the reality we all live in now and that’s ok with me.

This recipe is seriously so great! The bread comes out super moist and delicious. It has very little refined sugar, just the honey which is minimum. I have been watching my processed sugar intake but wanted to also give myself a treat so I added the honey.

You won’t regret this recipe!

I used salted vegan butter for the baking as I am not having any dairy products.

I wanted to make my bread loaf look all fancy so I added chocolate chips on top, which looked a little more pro! :)

I would recommend to let the bread cool down a bit before digging in, it will be easier to cut and will taste even better once warm.

INGREDIENTS:

  • 3 ripe bananas

  • 1 tbs cinnamon

  • 3 tbs nut butter (peanut, almond, etc)

  • 1 egg

  • 1 cup almond flour or paleo flour

  • 2 tbs honey

  • 1 tsp stevia

  • 1 tsp baking soda

  • 1 tsp vanilla

  • 1/3 cup soft butter (vegan butter or normal butter

  • Optional - chocolate chips, walnuts or anything crunchy

INSTRCTIONS:

  1. Pre-heat your oven to 350 F / 180 C

  2. Mash up the banana in a bowl and add in cinnamon and nut butter. Mix well.

  3. Beat the egg well and add to the mix. Mix together in bowl.

  4. Add in all other ingredients - honey, almond flour, honey, stevia, baking soda, butter. Mix well until completely combined.

  5. Add in walnuts or chocolate chips if you like (optional).

  6. Grease the loaf tin/pan with avocado oil or coconut oil.

  7. Pour in the final mixture in the pan/tin and pop in the oven.

  8. Leave in oven for approximately 50 minutes or until you insert a toothpick in the center of the bread and the toothpick comes out clean.
